Apple juice

Apple juice

Just like orange juice, there are hundreds of cocktails based on using apple juice, such as Apple Pie Martini, Voodoo or Orchard Breeze.

The easiest way of producing apple juice is by using a juice extractor. Given the skin and core contain lots of nutrients, apple quarters can be used, without any need to peel them (apart from cutting away the stork).

The best varieties for making juice are Bramley or Cox, rather than Golden Delicious (the juice of which is less flavoursome). As a general rule, apple types that are crisper tend to produce less cloudy juice.

Just like apples, apple juice can oxidise quickly, therefore it helps to add some lemon juice to avoid this happening.
