A large number of cocktail recipes rely on using pineapple juice, including Piña Colada, Zombie and Sex on the Beach.

Pineapple fruit are usually ripe when the skin turns brown. They need to be preserved at a temperature above 6-7°C, so should not be kept in a refrigerator before being juiced. The easiest way of making pineapple juice is by chopping up the flesh into small pieces and placing them in a juice extractor. A single pineapple can yield a large amount of juice.

Although some people prefer to make their own fruit juices for making cocktails, buying pressed or fresh fruit juice can be much simpler (and less messy), particularly if you intend to make a lot of cocktails. These days, Pineapple juice is readily available in shops and supermarkets, with a wide choice of brands and styles available.
