This 1930s absinthe cocktail is said to have originated in New Orleans. The double cream and milk help provide a smooth finish to balance the absinthe, which is complemented by the sweet almond. At the same time, this results in a relatively heavy cocktail - make sure you have a good appetite if drinking this before a meal!

An alternative version of the Absinthe Suisesse is made using absinthe, vermouth, sugar, crème de menthe and egg white. Once shaken with ice and strained into the glass, the cocktail is topped with sparkling water.

How to Make it

Ingredients

1 1/2 shot Absinthe

1/2 shot Almond (Orgeat) Syrup

1 fresh Egg White

1/2 shot Double Cream

1/2 shot Milk

Garnishes

1 sprig Mint

Choice of Cocktail Glass

Detailed Method

Shake all the ingredients together with ice in your shaker. Strain into an Old-fashioned glass containing crushed ice.
